Tortilla sandwich is a combination of two recipes. You can stuff cabbage subji, eggplant saung, string bean fry, or tamarind pongal.

You need:

  1. 2 tortillas
  2. 3 tablespoons cabbage subji, heaped
  3. 2 teaspoons coconut oil
  4. 1 teaspoon vegan cheese

To do:

  1. Spread coconut oil on the girdle and place both the tortillas together. Roast at medium heat for 2 minutes. Flip over and cook the other tortilla.
  2. Flip over keeping the cooked tortilla you. Fill in the cabbage subji or any other filling you are using. Sprinkle vegan cheese on the edges.
  3. Close the sandwich with the cooked side of the tortillas.
  4. Use a spoon and press the edges to seal. Gently flip over and cook for two minutes.
  5. Remove from the girdle, cut an serve warm.

Serving suggestions: Serve with Cucumber relish, mor kuzhambu, sampangi pitlay and sweet-sour soup.
