Bulgar wheat Upma (C) Living Sattva, 2019
Sattvic Upma (say: Oop-mah) made with wheat is usually eaten for fast on Sundays or full moon days.

Stove-top preparation of #Upma takes less than 20 minutes to make. This recipe provides a hearty single dish #meal.

You need:

  1. 1 tablespoon #organic #coconut oil
  2. 1 teaspoon chana dal
  3. 1/4 cup Spanish peanuts (optional)
  4. 6 red chilies, broken
  5. 1 teaspoon cumin
  6. 1 tablespoon grated #ginger
  7. 2 pepper corns
  8. 1 cup bulgar wheat
  9. 3 cups water
  10. 1 teaspoon Himalayan pink salt
  11. 4 tablespoon tamarind juice
  12. 1 cup mixed vegetables
  13. 2 tablespoons ghee
  14. Optional garnish: Chopped cilantro leaves

To do:

  1. In a large pan, add coconut oil, chana dal, #Spanish peanuts (if using), red chilies, cumin seeds. Cook in low heat until the peanuts or chana dal is roasted.
  2. Add water, tamarind juice, salt and mixed vegetables to the same pan. After the vegetables have cooked for few minutes, add bulgar wheat.
  3. Cook at medium heat, stir frequently. This step takes about 10-15 minutes depending upon your stove. Add more water if necessary.
  4. Add pepper corn and keep cooking until the wheat is cooked. Add ghee and chopped cilantro leaves (if using).
  5. Serve warm with tasty sides. See serving suggestions below.

Serving suggestions: Serve with Puzhukku, tamarind potatoes, and Milk peda. You can also sprinkle turbinado sugar or jaggery powder if you like it a little sweet.
