The #soup has the seasonal goodness of #apple #lentils #bellpepper #cumin #turmeric #ginger #tamarind. It is a good detox for spring. For a full #meal eat with other recipes see serving suggestions.

You need:

  1. 1 cup lentils
  2. 1 bell pepper
  3. 1 apple (optional)
  4. 1 teaspoon cumin seeds
  5. 3 mint leaves
  6. 1 teaspoon tamarind juice
  7. 1 teaspoon salt
  8. 1 teaspoon grated ginger
  9. 1 teaspoon turmeric
  10. 3 cups water
  11. 1 tablespoon vegan butter

To do:

  1. Wash the lentils and place in a instapot or pressure cooker.
  2. Add chopped bell pepper, apple, cumin seeds, mint leaves, tamarind juice, ginger, salt and turmeric.
  3. Add 3 cups water.
  4. Cook in lentil setting for 12-15 minutes.
  5. When warm, blend the lentils with vegan butter.
  6. Serve warm.

Serving suggestion: Serve with Upma, beans salad, idli and peanut chutney.
