The #soup has the seasonal goodness of #apple #lentils #bellpepper #cumin #turmeric #ginger #tamarind. It is a good detox for spring. For a full #meal eat with other recipes see serving suggestions.
You need:
- 1 cup lentils
- 1 bell pepper
- 1 apple (optional)
- 1 teaspoon cumin seeds
- 3 mint leaves
- 1 teaspoon tamarind juice
- 1 teaspoon salt
- 1 teaspoon grated ginger
- 1 teaspoon turmeric
- 3 cups water
- 1 tablespoon vegan butter
To do:
- Wash the lentils and place in a instapot or pressure cooker.
- Add chopped bell pepper, apple, cumin seeds, mint leaves, tamarind juice, ginger, salt and turmeric.
- Add 3 cups water.
- Cook in lentil setting for 12-15 minutes.
- When warm, blend the lentils with vegan butter.
- Serve warm.
Serving suggestion: Serve with Upma, beans salad, idli and peanut chutney.
