Uppuma is a complete single meal. This simple recipe is tasty despite using only few ingredients. Mix and match your vegetables and the spices. This is a no-fail recipe, although it requires diligent and vigorous mixing towards the end. You can add any vegetable available and handy with you. For this recipe uppuma is made with rava/ farina/ cream of wheat. You can also make it with cracked wheat, bulgar wheat and broken rice. This recipe has the same texture of polenta. You need:
- Coconut oil, 2 teaspoons, divided
- Mustard seeds, 1/2 teaspoon
- Cumin/ Jeera seeds, 1 teaspoon
- Red chili, 1
- Channa dal, 1 teaspoon
- Peppercorn, 4
- Rava/ farina/ cream of wheat, 1 cup
- Salt, 1 teaspoon
- Mixed vegetables, 1 1/2 cups
- Water 1 cup
- Ginger, 1 teaspoon grated, divided
- Cilantro, 1 teaspoon, chopped
To do:
- In a pan, add coconut oil, mustard seeds, cumin seeds, red chili, channa dal, and pepper corn. Toast over medium flame until mustard seeds splutter.
- Add rava and salt and dry roast for about 5 minutes. Rava will turn golden and smell roasted.
- Add mixed vegetables and water. Stir vigorously to prevent the formation of lumps.
- Stir in grated ginger.
- Add half teaspoon of coconut oil to prevent uppuma from sticking to the bottom of the vessel.
- Cook until the rava leaves the side of the vessel and the rava appears expanded and completely transparent.
- Switch off and sprinkle cilantro. Eat warm.
- You can refrigerate and freeze uppuma. However, sattvic food is eaten fresh cooked and eaten.
Serving suggestions: Serve uppuma warm with a drizzle of ghee. You can also eat with pickle, apple thokku, puzhukku, and a cup of chai. Squeeze fresh lime for extra zing.
